Healthy and delicious

This simple recipe will become your go-to salad for an easy lunch.

Ingredients

For the salad:

  • 150g Soba Noodles
  • ½ cucumber
  • 3-5 red radishes
  • 2-3 spring onions
  • handful coriander (optional)
  • 1 lime

For the dressing:

  • 1 garlic clove (finely chopped)
  • small piece of ginger (finely chopped)
  • 2 tbsp Rice Vinegar
  • 2 tbsp Mirin
  • 1 tbsp sesame oil
  • 2 tbsp Soy Sauce
  • 1 tbsp White Roasted Sesame Seeds
  • ½ tsp chilli flakes

Instructions

  1. Cook the noodles according to packaging, then strain and rinse under cold water.
  2. Finely chop the spring onions and slice your radish and cucumber.
  3. Combine all the ingredients for the dressing in a small bowl to one side.
  4. Once satisfied all of the ingredients have combined for the dressing, add your vegetables and dressing to your noodles in a medium serving bowl and enjoy!
