Quick chilli pickled cucumber
A quick and easy snack or side dish

Ingredients
60ml Rice Vinegar
1 tsp caster sugar
1 tsp salt flakes
1 pinch chilli flakes
1 pinch White Roasted Sesame Seeds
1 cucumber (thinly sliced)
Instructions
Combine the rice vinegar, sugar and salt in a bowl and stir until the sugar has completely dissolved.
Add in the thinly sliced cucumber and chilli flakes and stir the mixture to coat the cucumber. Leave this for 15-25 minutes to pickle.
Once pickled, drain the pickling liquid from the cucumbers, sprinkle some sesame seeds on top, and serve.
