Ingredients

  • 60ml Rice Vinegar
  • 1 tsp caster sugar
  • 1 tsp salt flakes
  • 1 pinch chilli flakes
  • 1 pinch White Roasted Sesame Seeds
  • 1 cucumber (thinly sliced)

Instructions

  1. Combine the rice vinegar, sugar and salt in a bowl and stir until the sugar has completely dissolved.
  2. Add in the thinly sliced cucumber and chilli flakes and stir the mixture to coat the cucumber. Leave this for 15-25 minutes to pickle.
  3. Once pickled, drain the pickling liquid from the cucumbers, sprinkle some sesame seeds on top, and serve.
