Poke Rice
It’s so easy being green!

Ingredients
For the rice:
- 1 x 125g Poke Rice bag
- 5 tbsp Rice Vinegar
- 1 tsp salt
For the tofu:
- 280g extra firm tofu (drained)
- 1 tbsp sesame oil
- 60ml Sushi Soy Sauce
- 2 garlic cloves
Other ingredients:
- 2 Sushi Nori sheets
- Cucumber, cut into strips
- 1 avocado, thinly sliced
- 1 cup edamame
- Sprinkle of White Roasted Sesame Seeds
- Handful of chopped coriander
- Spicy Mayo
Instructions
- Bring a pot of water to a boil. Place one bag of Poke Rice into the water and boil for 17 minutes.
- Once the rice has boiled, remove the bag from the water, drain your rice and add to a bowl. Add the salt and Rice Vinegar to the rice and mix well. Put to one side to cool.
- Chop your drained tofu into small pieces. Crush your garlic, and combine with the Soy Sauce. Mix this marinade with your tofu in a bowl, and allow to sit for 30 minutes.
- Whilst your tofu is marinating, you can prepare your fresh ingredients. Thinly slice your avocado, cucumber, and Sushi Nori, before setting aside.
- Heat sesame oil in a frying pan on high heat, adding in the marinated tofu. Fry until the tofu has browned on all sides.
- Prepare your bowl! Add the Poke Rice first as your base, before topping with avocado, edamame, cucumber, and Sushi Nori.
- Sprinkle on Sesame Seeds and coriander. Best served with our Sushi Soy Sauce and a drizzle of our Spicy Mayo.
