In a large bowl, beat ½ cup unsalted butter for 30 seconds.
Add ½ cup sugar and 2 Tbsp Shiro Miso Paste.
Beat everything together on medium speed until light and fluffy.
Whisk your egg in a small bowl, before gradually adding to the butter mixture while mixing.
Beat on high speed until combined.
In a small bowl, mix together 1 ⅔ cups all-purpose flour and 1 tsp baking powder with a fork.
With a sieve, gradually sift the flour and baking powder into the mixing bowl, mixing at low speed.
Once you finish adding all the flour mixture, turn up to high speed and beat until mixed well.
Chill the dough in the fridge for half an hour. Sprinkle a small amount of flour on a bench to roll out your dough.
Cut dough in half and roll into 2 logs.
Prepare a small flat baking sheet with measures of Black and White Roasted Sesame Seeds. Moist a paper towel with water and wrap around the dough to moisten.
Roll dough in the sesame seeds until well covered, and wrap in plastic.
Chill the dough in the refrigerator for 30 minutes. Meanwhile, preheat air fryer to 200°C and line a tray with baking paper.
Once dough is chilled, you can slice your cookies (around 1 inch per cookie).
Place cookies in the tray and into the air fryer. Bake for around 10 minutes, keeping a close eye to ensure cookies don’t burn!
Allow to cool slightly, before serving with your favourite herbal tea!
