Cosy, warming and delicious

Find the perfect winter warmer to fill you up as the evenings get cooler. Topped with perfectly marinated and glazed chicken, this meal will make you say ‘mmmmm’!

Ingredients

For the chicken marinade:

  • 1 tbsp Mirin
  • 1 tbsp Sushi Soy Sauce
  • Pinch of cayenne pepper
  • 1 garlic clove, chopped finely
  • 2 pieces chicken thigh (boneless)

For the chicken glaze:

  • 1 tsp brown sugar
  • 1 tbsp Sushi Soy Sauce

For ramen base:

  • 500ml chicken stock
  • 2 garlic cloves
  • 1 spring onion stalk, chopped
  • 1-inch piece of ginger, sliced
  • 1 fresh chilli (green or red)
  • 2 tbsp Sushi Soy Sauce
  • 2 tbsp Mirin
  • 300g Precooked Ramen Noodles

For the greens:

  • Bok choi
  • A drizzle of sesame oil
  • Sushi Soy Sauce (to taste)
  • 1 garlic clove sliced

To garnish:

  • Chopped spring onions
  • Sliced radish
  • 1 soft-boiled egg, or ramen egg

Instructions

  1. For the caramelised soy chicken, place all the ingredients for the chicken marinade in a bowl. Mix well to coat the chicken. If time permits, allow the chicken to marinate for at least 1 hour.
  2. Cook the chicken in a frying pan on a medium hob, making sure the outside marinade doesn’t burn.
  3. While the chicken is cooking, mix the brown sugar and Sushi Soy Sauce for the glaze. After the chicken is halfway through cooking, spoon the glaze over them. Let the chicken cook further until fully done. Set the chicken aside to cool down, then slice.
  4. To make the ramen, in one saucepan place the stock, ginger, garlic, spring onions, chilli (if using), Sushi Soy Sauce, and Mirin. Stop and cover the pot. Let it come to a boil at medium-high heat. Lower the heat to medium and let it simmer for 25 minutes. Taste the base and add more Sushi Soy Sauce if needed.
  5. Strain to remove the garlic, ginger, chilli, and spring onions, and turn to medium heat. Add the Precooked Ramen Noodles and cook as per the instructions.
  6. Wash the bok choi and cut it into smaller pieces if necessary. Place into a bowl and drizzle a little Sushi Soy Sauce and sesame oil on top, adding the sliced garlic clove and tossing to combine. Microwave in 1 minute increments with a cover over, until softened.
  7. To serve, divide the stock and noodles into two bowls. Add the bok choi, sliced chicken, spring onions, radishes, and a soft-boiled or ramen egg. Enjoy!
